Sweet and Sour Pork Chops with Cabbage
Nonstick cooking spray
4 (4- to 5-ounce) center-cut pork chops
1 medium onion, chopped (about 1/2 cup)
1/2 cup tomato juice
2 tablespoons cider vinegar
1 tablespoon soy sauce
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 large head cabbage (about 3/4 lb.) cut into 4 wedges
1. Spray large skillet with nonstick cooking spray; brown pork chops.
2. Combine onion, tomato juice, vinegar, soy sauce, sugar, salt and pepper.
3. Pour mixture over chops; bring mixture to a boil. Reduce heat to low; cover and simmer 30 minutes.
4. Add cabbage to skillet, cover, and cook 10 minutes longer. Remove pork from pan; keep warm. Toss cabbage in sauce and continue cooking until cabbage is tender.
5. Serve pork chops with cabbage and sauce.
